Kiss' version of 2000 Man was the first one that came to mind. Others:

Ace Frehley's "New York Groove"

Cheap Trick's "California Man"

Van Halen on "Pretty Woman", "Where Have All the Good Times Gone", etc.

Agreed with Patty Smith on "Because The Night"

There are tons more.

Also, a band called Gunn did a KILLER remake of "Word Up".

Maybe not better than the original, but I've always enjoyed The Lemonheads version of "Mrs. Robinson"...

another big fan of Preist's "Green Manalishi" cover...

I did find a video of Rob Halford and Paul Gilbert doing a pretty cool cover of "I Don't Need no Doctor" at some guitar clinic--may not reach the "way better" level...but Halford is an amazing talent to watch in such a no BS environment. (Paul Gilbert is, of course, his usual excellently sick self.)

Aretha Franklin's "Respect" easily topped Otis Redding's.

* I also think this cover is WAY better than the original (which isn't saying that much...)

Speaking of the Romantics, their version of "Little Latin Lupe Lu" just about tops Mitch Ryder's original on accounta it's in a segue from "What I Like About You" (MTV concert)

Nobody has mentioned Bob Dylan covers. He has written many great songs and sometimes I understand the words when he sings them, but generally they sound better by someone else. Like Hendrix's versions of "All along the Watchtower" and "Like a Rolling Stone " (live version). Also GnR's version of Knockin on Heaven's Door .......lots to pick from with Dylan.

Celine Dion rocked the f**k out of You Shook Me All Night Long.

I really liked her version of Roy Orbison's "I drove all Night." Cindy Lauper did a great job too.
